SOUS CHEF - MONTAMMY GOLF CLUB

This position is second in command in the kitchen. This manager ensures that all food production workers are performing their duties as prescribed by the quality standards established by the Executive Chef. The Sous Chef assumes all duties of the Executive Chef when necessary.

General Duties:

Prepare daily specials as established or assigned by the Executive Chef. Complete quality control line check for each meal period.
Supervise kitchen preparation of all stations and the production of all food, to include BQTS.
Verify, that kitchen employees maintain all portion sizes, quality standards, department rules, policies and procedures.
Assist with the training of kitchen personnel as well as food service staff.
Work as expediter for the kitchen as scheduled.
Perform line and/or prep responsibilities as required.
Supervises ongoing cleaning and work schedules for employees.
Provides input regarding functions, menus, policies, etc.
Maintain all necessary paper systems.
Attend any meetings held regarding food and beverage planning when necessary.

Minimum Qualifications:
A degree from a culinary arts training program is desirable. A minimum of 3 years in a food preparation position encompassing all phases of food preparation and kitchen operations is required.

Previous experience in a private club environment is strongly preferred but not required.

Must be able to read, write and speak English to facilitate communication.
